Happy Cinco de Mayo!

Happy Cinco de Mayo! This popular, Mexican holiday is celebrated to commemorate the Mexican army’s victory over the French Empire at the Battle of Puebla in 1862. Even if you’re not of Mexican descent, the holiday does present the perfect opportunity to cook up and enjoy some Mexican dishes (and they are quite delicious!). So, how are you planning to celebrate Cinco de Mayo this year? One thing’s for sure, if you’re planning on throwing a party at home, you’ll need a tasty spread of Mexican dishes to celebrate it properly!

One of our favorite dishes to have on Cinco de Mayo (or even on a random Wednesday) is guacamole! Guacamole is a delicious, Mexican dip that’s best served with chips or veggies, though it can also be used as a spread or be put on salads. No matter how you decide to indulge, guacamole is a tasty snack that all ages can enjoy!

Cinco de Mayo Guacamole

What you’ll need:

  • 2 ripe avocados
  • 3 tablespoons of minced red onion
  • 1 tablespoon of lime juice
  • 1 1/2 tablespoons of finely chopped cilantro
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of garlic powder
  • 1 plum tomato, diced (seeds & pulp removed)


  • Halve and pit and avocados, then scoop the flesh into a bowl and mash with a fork
  • Stir in onion, cilantro, cumin, tomato, garlic powder and lime
  • Serve with tortilla chips or your favorite vegetables
  • Enjoy!

Another dish that’s easy to make and extra-delicious are quesadillas. These tasty treats are great for a party because you can easily customize them to your guest’s preferences!

Customizable Quesadillas
Cinco de Mayo Quesadilla

Here’s all you need:

  • Flour tortillas
  • 1 tablespoon of butter
  • 1 cup of cheddar cheese
  • Salsa (optional)
  • Sour cream (optional)
  • Cooked Protein – chicken, beef (optional)


  • In a skillet that’s big enough for the tortilla to lay flat, melt 1/2 of the butter
  • Fry one side of the tortilla, then remove from pan
  • Place the remaining butter into the pan, then place an unfried tortilla in pan
  • Immediately sprinkle cheese on top of the tortilla (and any protein), then top with previously cooked tortilla (browned side up)
  • Press together with a spatula and cook until cheese is melted
  • Remove from pan and place on pizza stone or cutting board and cut into wedge-shaped slices
  • Top with sour cream and/or salsa
  • Enjoy!
